Have you had enough leafy greens this year? Maybe you’ve added (once again) ‘eat better’ to your New Year’s resolution list. If so, incorporating kale–the winter season’s ‘it’ vegetable–is a great step towards healthier eating. It is full of vitamins and minerals, and it is low in calories and fat. Kale is also very versatile and can be eaten hot or cold in a number of stews, pastas, soups and salads of course.
