There are a handful of basic cooking techniques that everyone should have in their arsenal, and the ability to make soup from scratch is one of them. It is much easier than you think, and you can usually make a great soup with whatever items you have on hand. The peak of summer corn season will be here soon, but in the meantime, frozen corn is a perfect substitute. Corn may be the main star, but it is also the natural thickener for this vegetable soup. Although our version is vegan (ie. it features no animal-based products), you could easily use chicken broth for the liquid and swirl in a bit of cream or sour cream at the end for extra body.
